Curry leaf powder is a popular spice mix in Indian cuisine that is made by drying and grinding fresh curry leaves. It can be used as a seasoning in various dishes like curries, soups, and stews to add a unique and flavorful taste.

Here is a simple recipe for making curry leaf powder:

Ingredients:

2 cups of fresh curry leaves2 tbsp of urad dal1 tbsp of chana dal2 dried red chillies1 tsp of cumin seeds1 tsp of coriander seeds1/2 tsp of black peppercorns1/4 tsp of asafoetida (hing)Salt, to taste

Instructions:

Wash the curry leaves thoroughly and pat them dry with a kitchen towel.

Spread them out on a clean cloth and let them dry in the sun for a few hours or until they are completely dry and crispy.

In a pan, dry roast the urad dal, chana dal, dried red chillies, cumin seeds, coriander seeds, and black peppercorns on medium heat until they turn golden brown and emit a pleasant aroma.

Add the asafoetida and stir for a few seconds.

Add the dried curry leaves and continue to roast for another 2-3 minutes until they are crisp and fragrant.

Turn off the heat and let the mixture cool down completely.

Transfer the mixture to a blender or spice grinder and grind it to a fine powder.

Add salt to taste and mix well.

Store the curry leaf powder in an airtight container and use it as required.
