Healthy Avocado Toast


Here's a healthy breakfast recipe for you:

Avocado toast with egg and spinach


2 slices of whole grain bread

1 ripe avocado

2 eggs

2 cups of fresh spinach

1 tablespoon of olive oil

Salt and pepper to taste


Toast the bread to your liking.

Mash the avocado in a small bowl and season with salt and pepper to taste.

Heat the olive oil in a non-stick skillet over medium heat.

Add spinach and saute for about 2 minutes or until wilted.

Push the spinach to the sides of the skillet and crack the eggs into the middle of the skillet. Season the eggs with salt and pepper.

Cook the eggs until the whites are set and the yolks are cooked to your liking.

Spread the mashed avocado evenly on each slice of toasted bread.

Using a spatula, carefully transfer the eggs and spinach to the top of each slice of avocado toast.

Serve immediately and enjoy your healthy breakfas.
